Golden Banana Muffins

Anti-inflammatory packed muffins excellent for the whole family@

Makes 12 super large or 16 regular sized muffins

👉2 cups gluten free flour blend (I made my own using 1 cup buckwheat flour, 1/2 cup rice flour and 1/2 cup oat flour)
👉5 very ripe bananas
👉1/2 cup coconut oil or butter
👉1/3-1/2 cup honey
👉2 flax eggs
👉2 tbsp non-dairy milk
👉1 tsp vanilla extract
👉1 tsp baking soda
👉1 tsp baking powder
👉1-2 tsp turmeric powder
👉Pinch salt
👉1/2-3/4 cup cacao nibs (you can also use dark chocolate chips, raisins, or nut of choice)

🍌Preheat oven to 350 and line/grease your muffin tins
🍌Combine dry ingredients and set aside
🍌Mix honey and coconut oil/butter using a hand mixer until creamy and soft
🍌Add in banana, blending well, then all remaining ingredients EXCEPT cacao nibs/chocolate/raisins/nuts
🍌Gently add in the nibs (or other alternatives) mixing gently BY HAND
🍌Scoop batter into prepared muffins trays and bake 30-35 minutes or until toothpick comes out clean

Happy Hormones Smoothie

1 cup unsweetened non-dairy milk of choice
2 tbsp raw pumpkin seeds
2 tbsp hemp seeds
1-2 tbsp hazelnut butter
1 tsp maca powder
1/2 raw carrot
1/2 banana
1/3-1/2 cup frozen blueberries
1 tbsp coconut oil

Blend all in a high speed blender and enjoy! 😘
